I don’t know about you, but in my home weeknights are crazy. Every time I think it’s going to calm down, I get another fast pitch or curve ball, so I always feel like I’m scrambling to make dinner.

Sure it might be the result of work and the baby being a a non-stopping moving machine. What ever it is, I’m finally coming terms that this maybe the new rythym of life and it’s probably here to stay.

Luckily the one thing I’ve come to master lately is getting dinner on the table with low-fuss recipes Much easier to say than do, but I do have army of stand-bys like this Sausage and Mushroom Pasta.

Really this cannot get easier, much of the flavor is extracted from browning the Jimmy Dean Roll Sausage. I am a huge fan of the flavor and how tender and soft the meat is. Along with browning the sausage, make sure you don’t skip the step of toasting the seasonings outlined in the recipe. It turns what would be a ho-hum dish into something that really shines.

So no matter how crazy the madness is in my home a dish like this always brings everyone around the table. In fact we call this the “Family Reset Meal”. It’s what I bust out when I feel like we are all about to split at the seams. As an added bit of cheer, I add flowers to the table to brighten the mood—between the food and the flowers—it works every time.

Sausage and Mushroom Pasta

Yield: Serves 4-6


  • 1 teaspoon fennel seeds
  • 1 teaspoon whole coriander seeds
  • 1 teaspoon whole black peppercorns
  • 1 teaspoons coarse kosher salt
  • 1 Jimmy Dean Orginal Sausage Roll
  • 2 cups mushrooms (any variety will or blend of)
  • 1/2 cup white wine
  • 1 ½ cups (about) beef stock or chicken stock, divided
  • 1lb. bow-tie pasta, cooked


In a small skillet pan, over medium heat, toast fennel seeds, coriander seeds and peppercorns until fragrant and fennel seeds begin to darken, about 2 to 3 minutes. Cool spices, about 5-7 minutes. Transfer cooled spices to a spice grinder or small coffee mill and process to a fine grind. Transfer mixture to a bowl and mix in salt; set aside.

Cook Jimmy Dean Original Sausage in a large skillet over medium heat, until cooked through, about  minutes 14-16 minutes. Add in mushrooms and saute until browned, 3-4 minutes.

Add in wine and boil for 1 minute, while continuously stirring and scraping up browned bits. Add 1 1/2 cups stock and toasted seasonings, stir to blend. Reduce heat to lowest setting and gently simmer, stirring occasionally to bring flavors together, about 1 hour. Add pasta and toss to coat. Serve with Parmesan.
