Well this one is for those of you who are still suffering from a holiday hangover. You know the feeling, sluggy from the excess of calories, along with everything being a bit more snug than you’re comfortable with. Well, it happens to the best of us.
And when it does, a little a balance goes a long way towards getting back to being centered.
For me, I naturally have way too much sugar – actually, this is a regular occurrence. I will have cake for breakfast and then a donut at 10am, but lunch and dinner is usually a power salad with arugula, berries, brown rice, quinoa, with a protein or a green pizza like this.
It’s easy to make, filling, and taste great. In fact you would never know there’s an effort to be healthy with the thin wheat crust, the swap out from a higher fat cheese to Feta and the greens of course are lightly sauteed to a tenderness and flavored with a heavy leek sweating. Artichokes are most definitely a competitor for favorite vegetable ever. I could eat them for every meal if they weren’t so darned expensive! This is a beautiful dish – I can’t wait to try it out!
