The culprit: marshmallows. The cookie: Rocky Road. Yeah, not so much, right?
This might be my best fail, E-V-E-R. I completely brain faded. Marshmallows are more than 70% sugar, of course they will melt at high heat. As for the taste (based on what I could scrape up), um, I missed the mark on that one as well.
So off the heels of all that self congratulatory back patting in the Coffee Cake recipe, I was pretty much humbled by these not so great tasting and ugly babies.

I learned from Mrs Fields that you need to freeze the marshmellows before cooking them in your cookies. Try again.

I feel your pain! I decided I was a cookie genius and tried to create an oatmeal butterscotch coconut cookie… the taste was good, but they were so flat and completely fell apart. However, I’ve decided to embrace the failure – they’re currently a bag of crumbs in my freezer, and will become the foundation for what I hope is a wonderful no-bake pie crust for a holiday pie this fall! 🙂
