Watercress and Apple Salad with Chopped Walnuts

Yield: Serves 4

Ingredients:

  • Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon mayonnaise
  • 3 teaspoons honey
  • 2 teaspoons chopped fresh thyme
  • salt and pepper to taste
  • Salad
  • 4 cups water cress
  • 1 1/2 cups thinly sliced apples, about 1 apple
  • 1 cup thinly sliced celery, about 2 to 3 stalks
  • 1/4 cup thinly sliced red onions
  • 1/4 cup chopped walnuts

 

Directions:

To make the dressing combine all ingredients and whisk to combine. Set aside.

To make salad combine all ingredients then drizzle dressing on top.
