Chewy Caramel-Coconut Brownie

Let’s get fat together! Yep, these are slightly outrageous—full of crazy gooeyness from the caramel, a chewiness from the brownies, nuttiness from the pecans and over the top awesomeness with the coconut. There’s a lot going on in this bar, but trust me when I say, the only thing you will notice is how many are left for your next serving.

I made these over the weekend and took them to a family get together and they were enjoyed by kids and adults alike.

I’m really clipping this post to a matter of a few sentences because per my usual style when I do do this, I’m over booked and over-tired with deadlines–some things never change–pregnant or not. It’s like I have no sense of time or abilities to manage a paced schedule. Nope. Somehow I’ve been set on crazy—for, oh you know—the last 10 years!

These look SO GOOD! We’ve been eating a lot of oreos (which we never usually eat) to fill our brownie void over here in Vietnam! It doesn’t quite work, but they sure taste good anyways!

Billy – So nice of you, I’m so glad. Photography isn’t everything, but it is important since people can’t smell or taste the food.

These look amazing. I’m interested in going a bit more “”from scratch” with these (no cake mix or store bought caramels). Any tips would be much appreciated!
PS = LOVE your blog. I usually want to make every single thing you post. I used three of your recipes to make a dessert plate for my family’s annual valentines dinner a few months back. Everything was a hit!
