Snickers Cake

This creamy no-bake Snickers cake is stacked with creamy layers of homemade chocolate and peanut butter pudding along with some graham crackers softened to a cake like texture. Draping the mad goodness of the creamy layers is a heavy pouring of caramel and chocolate ganache sauce. Of course I can never just stop at good enough, I had to take it over the top and chop up some Snickers for added authenticity and then finish that off with some caramel and chocolate drizzle.

It’s cakery for the lazy. I love icebox cakes because they require no baking and always seem so much easier. But you know what is not easier, making nice even layers. I just don’t have that cake carving skill nailed down yet.

Rice Krispie Cakes

A while back a friend of mine asked if I would help create a kicked up bake sale item for her daughter’s football cheer team. Keeping my audience in mind, I decided to stick with the classic Rice Krispie square but dress it up with a cake like flare.

Coconut and Citrus Cake

Here’s the thing when you are self-taught baker, you bake a lot and your basis for what works is reading cookbooks like novels, but the biggest learning curve comes from a lot of trial and error. At least that’s how it works for me.

A while back I started melting butter for cookies and not just in cookies that required a brown butter component. I tried it because I’m always forgetting to take out butter to soften it and was too lazy to cut it up for more surface area to bring the butter to temperature quickly. That said I wanted to see how the melted butter methodology would work in cakes. I first tried it in this pound cake recipe, with no compromise in texture or rise.
