Let’s talk cakes today, to be specific boozy rum cakes. These are easy to make and great for giving. Make it as mini bundt cakes or as one large cake. Either way both ship well.
And heads-up to all those that usually get a cookie box for me, guess what–I’m behind schedule this year. So yes, they are still coming, but I’m switching things up a bit with more than just cookies. Any guesses?

For those of you that don’t know me, I had rum cake for the first time a few years ago by way of a co-worker. I instantly loved it and asked for the recipe with no success since she sold them. So like a proper foodie, I saved a few slices so that I could compare it to the recipe testing I did on my own.

For those of wondering what’s up with the above picture of dirty dishes, I started taking pictures of what I termed “Aftermath” to chronicle what I sometimes love more than the composed shots. I’m not sure exactly why, but I love these messy shots. They aren’t styled just everything piled in a tray for clean-up after shooting.

Ha.. don’t feel so bad. I grew up in a “dry county” in the south where a rum cake was made with rum flavoring. Pretty icky. Imagine my surprise when I went to the Cayman Islands and had REAL rum cake. I even embarrassed myself by saying OUT LOUD, “this cake has rum on it!” My dining partners said, “uh, yeah.. it is RUM cake.” There is just no explaining rum flavoring after that experience. And seriously, there is no defense for rum flavoring.

Made the “boozy” version of the mini cakes using a light rum I acquired on a Belize trip some years ago. WOW, are these good! House mates are already asking when the next batch is scheduled to be made. Naomi, how do you get the pattern with the glaze? I’d love for my mini cakes to look as good as they taste!
