Chocolate Mint Brownie Trifles

This Chocolate Mint Brownie Trifle is an easy-to-make St. Patrick’s Day dessert that’s ready to serve in just 15 minutes.

I don’t know how or when mint became almost synonymous with St. Patrick’s Day, but somehow it has, maybe because it’s green. But if it’s green minty dessert vs. green beer, I’ll take the former any day. Although, I occasionally like a good beer, I’d rather have a gin and tonic. But let’s get off the subject of alcohol because the stuff is banned from my reach for another 10-12 weeks until I birth the little guy in me.

Speaking of bans, this seems to be the week. I’ve been placed on a “diet” of sorts. If you read yesterday’s post then you know, my doctor asked me to slow my food consumption due to my rapid weight gain, which has pushed me beyond my allotted maximum gain for the whole pregnancy.

So make this and enjoy it like I can’t.

Chocolate Mint Brownie Trifles

Yield: Makes 4 servings

Ingredients:

Directions:

  1. Place whipped cream in a bowl and fold in McCormick's Green Food Color and Pure Mint Extract. Transfer mixture to a pastry bag fitted with a round or open star tip.
  2. Pipe colored and flavored whipped cream into bottom of glass, then layer with brownie. Repeat as necessary. **Optional: sprinkle with chocolate shavings

    oh, I’m weeping a tear for you and not being able to indulge in any of this awesome looking trifle! I am just about 21 weeks and was worried about my weight gain, but this week my doctor said things are looking good…thank goodness! It’s so hard not to indulge with a little one kicking away in there!

    oh Naomi! I’m so sorry. I gained like 60 pounds with one daughter and 50 with the next. It comes off- but there is nothing worse than “weighing in”!!

    You’re telling me that you’re pregnant and you can’t actually have this? That’s torture!

    I’m still trying to wrap my head around this. There are brownies and there’s minty whipped cream. And then they’ve been piled on top of each other to make into a trifle?
